The Course Director
Garth McColgan is “Mr FoodActive”. A trained chef (and Latin scholar!), his passion in life is to introduce young people to the wonders of cooking, the joys of eating and the wisdom of good food habits.
He developed the FoodActive concept more than a decade ago, and since then he has been teaching his unique course to students at Gonzaga College and St Conleth's College, both on Dublin’s southside.
He has trained under some of the world’s finest chefs, with a large chunk of his training taking place under TV chef Paul Rankin at Belfast’s legendary Roscoff Restaurant (which was the first restaurant in Northern Ireland to be awarded with a Michelin Star).

Mark McColgan is the “Outdoor Pursuits” specialist on the FoodActive Team. Mark is a former restaurateur in his own right, having owned and managed The Blue Room Cafe (which specialised in modern Irish cuisine) in Dublin’s City Centre. But though he is still active in the kitchen, these days you are more likely to find him on a 50km cycle - or at the top of a mountain in Wicklow!
Paul Kelly, of the prestigious Merrion Hotel in Dublin, is a member of the Irish team which performed so admirably at the Culinary Olympics in 2008, taking home 24 silver medals and 11 bronzes! He loves showing his exemplary pastry skills to the young audience at FoodActive – and they love tasting his amazing creations.
Paul Quinlan is a Failte Ireland trainer in the Hospitality Industry. But equally importantly, he is the currently the manager of Merrion Cricket Club in Dublin, as well as being a top cricketer himself. In fact, Paul is a keen sportsman across a number of disciplines, and he has plenty of experience in coaching young people of all abilities.
